So with having WLS, I need things not only in smaller portions, but healthier versions. Even more so after having the ERCP procedure. My daily allowance of fat grams has drastically been reduced.
A while ago, I came across a recipe for peanut butter protein balls. Wow! They were fantastic! I certainly didnt make enough because they were gone the next day. Lesson learned, make bigger batches.
I always research everything. Information, recipes, vitamins.. you name it, I have probably googled it. A friend has mentioned PB2 powdered peanut butter. Then I saw another mention peanut flour. (Basically the same thing) It's just what it sounds like. peanut flour. Trader Joes had peanut flour and apparently its been discontinued. I have now found a new kind, Protein Plus Peanut Flour by Southern Grace Farms. (They have a FB page, Protein Plus Peanut Flour). FABULOUS!

Ok back to the balls of it all. Here is what I came up with. Its a little bit of this and a little bit of that thrown together.
Numtella Protein Balls
2 tbsp peanut butter
1/2 c peanut flour
3 tbsp skin milk (you can use water, soy, almond milk)
1-2 tbsp Splenda
2 tbsp unsweetened cocoa
3 tbsp choc/pb protein powder
Mix everything together until you reach a cookie dough consistency. Measurements dont have to be precise.. just close. If dough is too watery, add more peanut flour. If its too sticky, then add a drop of whatever liquid you put in.
Roll into little balls, roll in choc/pb protein powder, chill in fridge for at least an hour and keep stored in fridge.

The culprits in this yummy conspiracy.. Truvia, TJ's unsweetened cocoa, Smuckers Natural PB, Protein Plus Peanut Flour, Body Fortress choc/pb protein powder and skim milk.
Mix with a strong spoon or mixing utensil. Not a whisk. Great for an arm workout..
A few different liquids would work. Milk, Water, Soy milk, Almond breeze..
Its a pain in the butt to mix, but sooo worth it! It's flexible and forgiving.. play with it, taste it, season it more if you need to... No eggs, just dive in!
Roll into a ball. I like small balls..

Like Peanut M&M size is great.
Drop into chocolate/peanut butter protein powder to coat.
This is an ice cube tray that makes ice for sports bottles. Pain in the ASSSS to use but perfect for the balls!
Chill for a while then move into a ziplock bag or tupperware in the fridge.
Some info:
Peanut Flour needs to stay in the fridge, once its been opened. Keep in an airtight container.
Peanut Flour has alot less fat in it then Peanut Butter and packs a wallop of protein. Still need to add a little bit of organic PB for the natural oils..
Play with your food!
Leave out the cocoa, and choc/pb protein powder.. Add organic apple juice as your liquid. Roll in vanilla protein powder or even cinnamon.
Smash a banana in for even more protein and potassium!
You can take just peanut flour and mix with water for a lower fat peanut butter. Protein Plus Peanut Flour does NOT lack peanut flavor at all. And I am a self-proclaimed peanut butter freak.
